Cobo Bar & Grill is an al fresco restaurant located at Salterra Resort & Spa on South Caicos. Just steps from Salterra Beach, it is an inviting gathering place where guests can savor fresh flavors, sip handcrafted cocktails, and enjoy the beauty of the bay for lunch and dinner. The name Cobo nods to the conch that has long been central to the island's culture (cobo is a Taíno word for queen conch).

The restaurant’s atmosphere is casual yet refined. Open-air seating brings the outdoors in, while views stretch across the water where pelicans dive and—in the winter months—humpback whales migrate past. It is a setting designed for lingering—perfect for long lunches under the sun, sunset cocktails, or barefoot dinners that extend into the evening.

The Menu

Cobo’s culinary direction is rooted in Latin influences layered with Caribbean character. The menu emphasizes shareable plates, fresh seafood, and hearty mains, crafted with care and a focus on local sourcing.

Appetizers include shrimp aguachile, conch salad, and guacamole with roasted corn salsa that pairs effortlessly with crisp tortilla chips. Tacos are, of course, also on the menu, and arrive on soft corn tortillas with a choice of fillings—grilled fish with jicama slaw and pineapple salsa, marinated beef with Oaxaca cheese, or sautéed shrimp in guajillo butter.

Mains include roasted pork loin with pumpkin seed pepita sauce, pan-seared local snapper with herbs and lime, and roasted chicken with poblano sauce. There are also vegetarian choices to browse, from mushroom tacos to chile relleno stuffed with Oaxaca cheese. Side dishes such as esquites, black beans and rice, and guacamole round out the table for sharing.

Desserts bring a sweet finish to the meal, from a tropical tres leches cake layered with passionfruit and citrus to a warm Caribbean bread pudding with Bambarra rum zabaglione and spiced crumble. Churros with chocolate ganache and a daily selection of gelato and sorbet complete the menu.

Guests may choose refreshing options like Piña Fresca, with tequila, cucumber, and aloe, or the Coco Cobo, a rum-based drink with cream of coconut and pineapple. Watermelon Sugar High blends tequila, watermelon juice, and sea salt, while the Mango Passion Margarita combines Casamigos Reposado and Tajín.

Other standouts include Island Lavender, a gin cocktail softened with lavender syrup and coconut water, and 8 Days a Week, a rich rum drink layered with pineapple and vanilla. The drinks list also highlights local Bambarra rum, regional spirits, and a rotating selection of wines and beers chosen to pair with both light seafood dishes and more robust plates.
