Brine Restaurant is Salterra Resort's gourmet dining offering and serves a curated five-course menu of South Caicos-inspired dishes. Named in homage to the island’s legacy of salt (once treasured globally as white gold), Brine aims to carry forward the island's story in a contemporary expression of fine dining.

The restaurant overlooks the South Caicos salt salinas, where sunsets reflect across still waters. The setting is calm, understated, and ideal for evenings that unfold slowly. The interior design balances elegance with warmth, and the attentive service ensures guests feel both cared for and at ease.

Brine’s menu is a journey through carefully composed flavors. Dishes highlight fresh seafood, local produce, and Caribbean spices while incorporating global techniques that bring refinement without losing a sense of authenticity. Salt is present not only as seasoning, but as inspiration.

The five-course tasting menu begins with The First Crystals, a salt-crusted conch tartlet paired with citrus aioli and cassava, elevated by spiced tartare and fermented mango. From there, guests are introduced to The Ocean’s Gift: grilled red snapper with a coconut rum sauce, served with pistachio purée, layered sweet potatoes, and smoked pineapple salsa.

The Golden Sands follows with honey-glazed duck prepared sous-vide, accompanied by lavender, citrus, and roasted apricot. The White Gold of the Islands brings a tender beef filet finished with truffle jus, balanced by seasonal vegetables and purple potatoes. To close the evening, Sunset Salinas offers a tropical combination of mango, coconut, passionfruit, and sea salt.

Brine's culinary program is complemented by an extensive wine list curated to match its evolving menus. Rare vintages sit alongside boutique labels, with pairings designed to enhance both delicate seafood and richer courses. There's also a tasty menu of crafted cocktails on offer through Brine’s bar program.

Signature cocktails include The Brine, a vodka martini infused with the restaurant’s own brine blend, and Seaside Martini, a vegetal expression featuring Edinburgh Seaside Gin and tomato water. Guests may choose a light and refreshing option like Before the Dill, or a tropical and smoky blend such as the Smokey Mai Tai.

More adventurous selections include What’s Up, Doc, a carrot-based twist on the Bloody Mary, or Angler’s Catch, a tequila cocktail brightened by rock melon and citrus. For a smooth conclusion, Tropical Sunset combines aged rum, Campari, pineapple, and vermouth, evoking the colors of the horizon outside.
